At Dad’s Country Kitchen LLC, barbecue is more than food – it’s purpose-driven cooking built on resilience, sustainability, and inclusion.

Founded by Pitmaster Bryan Goold, Dad’s Country Kitchen began catering part-time in 2013. After years of refining recipes and building a loyal following, Bryan took the leap in 2025, designing and launching a fully custom, competition-style mobile BBQ trailer and transitioning the business to full-time service.

But this isn’t just another BBQ company.

Bryan is a three-time cancer survivor and Type 2 diabetic. His personal health journey reshaped how he thinks about food and inspired menus that allow everyone to enjoy barbecue without compromise.

Oregon’s First 100% Solar-Powered Class IV BBQ Trailer

Dad’s Country Kitchen proudly operates Oregon’s first 100% solar-powered, Class IV licensed mobile food unit built for serious barbecue.

Our Class IV license allows us to:

  • Prep
  • Cook
  • Serve
  • Clean
  • Cook raw animal proteins

All inside the trailer.

The trailer is powered by a 16,000W lithium battery system that runs on solar and shore power simultaneously while operating. With all-electric commercial appliances and no combustible liability inside the unit, we have created a safer, cleaner, carbon-neutral cooking experience.

We use:

  • RecTec pellet smokers
  • 100% oak pellets
  • Sustainable electric equipment

Our trailer carries:

  • 75 gallons of fresh water
  • 165 gallons of waste water capacity
